THE CHOCOLATE REVOLUTION
The rich flavours of the chocolate come entirely from the cocoa bean. No flavourings are added that are not naturally contained in the cocoa bean. The result is a full-flavoured, fruity Fairtrade and organic chocolate that is not dominated by bitter substances, even with a high cocoa content.
As the conventional roasting and conching process used in the traditional chocolate industry almost completely destroys the natural flavours due to the high processing temperatures,̈flavours have to be added subsequently, e.g. vanilla and large amounts of sugar (up to 60%) for flavouring and as flavour carriers.
Thanks to the globally patented extraction process, they obtain 4 pure elements from the cocoa bean and thus create unique products ranging from white to 82% dark chocolate without any bitterness.
